It’s freezing here and I can’t live on salads any more – any ideas on food w least amount of ingredients u can point me in direction of – I’m starving haha well not yet anyway
Seemed like you decided to come home for some food! We’ll have to get the fatted calf killed for you at the start of June…or even one of Dad’s carefully looked after bullocks – do you think we’ll get away with it?!
Help….. having watched Philip Boucher Hayes’ very good/disturbing documentary on RTE last night I am determined to make the wee boy the healthiest school lunches possible (or at least things that don’t include ham sandwiches!)
Now, that might sound very do-able, but we are talking about a reasonably conservative 4 yr old who wouldn’t touch hummous with a lightsabre and thinks lettuce is for rabbits and mammies (wonder where that notion came from, Dad?)
Anyway, would you mind putting your considerable knowledge and contacts to use and unearth for me a couple of ideas that are managable when also trying to get 5 of us up and out every morning?
BTW, seeing as LM is fast becomming a scone connisseur, must get her to try some of MIL’s delicious treacle scones…
Haven’t seen the documentary but heard plenty on Twitter about it!
What does Young Sir think of couscous? I know that Little Missy loves when we have it as a salad or side dish. It’s often at risk of eclipsing anything else on the table! This Spiced Squash and Couscous Salad is very popular in our house but so is just a very simple couscous base (reconstitute the grains, toss with olive oil, lemon or/and orange juice and seasoning) with leftover roasted veggies, chickpeas, leftover meat, smoked mackerel, toasted nuts or seeds, tomatoes, feta cheese – anything that you think he might like.
I often use bulgar wheat to make it slightly more nutritious or even quinoa. Little Missy also loves any kind of lentils or beans so they might be an good salad option too. Pasta salads are a big winner around here too (Old Millbank Smokehouse Smoked Trout and Lemon Pasta Salad is also good made with smoked mackerel).
Check out the Lovely Lunches for a few more ideas and let me know if you think any of them will be useful.
I’m afraid these are all make ahead ideas though. Best thrown together the night before if you can at all, and eaten at room temperature!
